Ital Rasta pasta

Ingredients

· 1 pack of oyster mushrooms

· Two peppers (I use green and orange) any color will suffice

· One small red onion

· 1 small zucchini and squash

· 1 can of coconut cream or milk

· 1 box of Banza chickpea penne pasta (or rigatoni)

· Jerk seasoning (wet or dry)

· Smoke paprika

· Onion powder

· Sea salt

· Grapeseed oil or other approved oils

Directions

1. Clean produce and mushrooms.

2. Cook noodles al dente.

3. Chop veggies and mushrooms while preheating skillet.

4. Sauté’ mushrooms and add jerk seasoning.

5. After a few minutes, add veggies and season to taste.

6. Add can of coconut cream, add spring water to half the can, add to skillet and bring to boil.

7. Reduce heat and season to taste.

8. Add cooked al dente noodles to skillet, mixing well and allow to simmer for 10 minutes.

9. Remove from heat and enjoy!
